Pork & Coconut Fried Rice

Method

  1. Place the SunRice Medium Grain Brown Rice and water into a rice cooker and set to cook.
  2. Once all the ingredients are prepped, heat a large wok over high heat.
  3. Once hot, add the oil and the pork and use a wooden spatula to push the pork out to the edges and allow it to brown really well on one side.
  4. Once golden underneath, add the lemon grass and onion to the top and then stir.
  5. Cook for 5mins then add the brown sugar, coconut and cooked rice and mix well.
  6. Pour in the lime juice, fish sauce and hoisin and continue to cook over high heat for 5 mins stirring occasionally, until there are golden crispy bits and everything is combined.
  7. Sprinkle with peanuts and serve immediately with fresh herbs and lettuce cups.

Hints:

  1. Adjust sweetness by adding more or less brown sugar to taste. Add chilli as desired.
