Recipe by Lucy Tweed for Ondine Flat Peaches and Flat Nectarines

Smoky grilled peaches meet fresh prawns, mint, chilli and lime in this colourful dish that’s on the table in just 20 minutes.

Tip: For this recipe, choose firm flat peaches as they’ll hold their shape when cooked.

Method

  1. Preheat a barbecue or chargrill pan over medium-high heat.
  2. Lightly brush the cut sides of the flat peaches with olive oil. Grill for 2–3 minutes on each side, or until lightly charred, softened and juicy. Remove from grill and set aside.
  3. Toss the cooked prawns with a little olive oil and a squeeze of lime juice. Place on the grill and cook until heated through and lightly charred.
  4. Arrange the grilled peaches and prawns on a serving platter.
  5. Top with mint, chilli, a drizzle of honey and a generous squeeze of lime juice. Season with sea salt flakes and serve immediately.
