Method

1.Preheat oven to 200 degrees fan forced and prepare a baking tray.

2.Cut small 1mmthicknessslits into carrots (optional step for extra flavour retention).

3.Combine carrots, chickpeas, spices, oil and honey in a bowl and stir to combine.

4.Spread out spiced carrots and chickpeas on a baking tray, sprinkle with feta and salt.

5.Bake for 15-20 minutes or until carrots are tender.

6.Serve with pomegranate and garnish with parsley.
