1.Preheat oven to 180 degrees and prepare a baking tray.
2.Place carrots, garlic, parmesan, Italian seasoning, salt and pepper in a bowl and drizzle with olive oil, tossing to coat.
3.Lay carrots out on a baking tray.
4.Bake for 20-25 minutes until parmesan has melted and carrots have softened.
5.Serve sprinkled with fresh parsley and alongside mayonnaise.
