Method
- Place oil in a large frying pan over medium heat. Add the onion and garlic and cook for 1-2 minutes or until fragrant and softening.
- Add the beef mince to the pan and cook, stirring for 2-3 minutes until starting to brown. Add the diced mushrooms and cook, stirring for a further 2 minutes before adding the spices and salt. Continue cooking for 1-2 minutes until the mushrooms and meat are cooked through.
- Crumble the beef stock cube into the pan. Add the sugar and water and stir to combine. Reduce heat to low and simmer for 5 minutes or until the mixture thickens. Remove from the heat.
- Use the Blended Mexican Mince as a filling for tacos, burritos or nachos.
- Serve with toppings of your choice including charred corn, shredded lettuce, diced tomato and onion, and fresh coriander sprigs.
