Method

  1. Place oil in a large frying pan over medium heat. Add the onion and garlic and cook for 1-2 minutes or until fragrant and softening.
  2. Add the beef mince to the pan and cook, stirring for 2-3 minutes until starting to brown. Add the diced mushrooms and cook, stirring for a further 2 minutes before adding the spices and salt. Continue cooking for 1-2 minutes until the mushrooms and meat are cooked through.
  3. Crumble the beef stock cube into the pan. Add the sugar and water and stir to combine. Reduce heat to low and simmer for 5 minutes or until the mixture thickens. Remove from the heat.
  4. Use the Blended Mexican Mince as a filling for tacos, burritos or nachos.
  5. Serve with toppings of your choice including charred corn, shredded lettuce, diced tomato and onion, and fresh coriander sprigs.
