Method
- Combine the mince, mushrooms, egg and seasoning in a bowl. Mix until evenly distributed then form into 4 evenly sized patties.
- Heat oil in a large frying pan over medium heat. Cook the blended patties on each side for 3-4 minutes, ensuring a crust has formed before flipping. Once cooked, remove from the pan and set aside.
- Place 4 lightly oiled egg rings into the pan. Crack an egg into each ring and cook for 1-2 minutes then flip and cook for another minute.
- Cut the muffins in half and toast in a toaster or grill. Once toasted, spread with butter.
- Assemble the breakfast muffins by placing the cheese on the base, followed by the blended patty and fried egg, then topping with the top of the muffin.
