Method

  1. Combine the mince, mushrooms, egg and seasoning in a bowl. Mix until evenly distributed then form into 4 evenly sized patties.
  2. Heat oil in a large frying pan over medium heat. Cook the blended patties on each side for 3-4 minutes, ensuring a crust has formed before flipping. Once cooked, remove from the pan and set aside.
  3. Place 4 lightly oiled egg rings into the pan. Crack an egg into each ring and cook for 1-2 minutes then flip and cook for another minute.
  4. Cut the muffins in half and toast in a toaster or grill. Once toasted, spread with butter.
  5. Assemble the breakfast muffins by placing the cheese on the base, followed by the blended patty and fried egg, then topping with the top of the muffin.
