Using fresh capsicum, garlic, onion and cashews, this recipe is easy to make and is perfect to enjoy the next day for work lunch!
- Cook pasta according to packet instructions. Once done, drain but make sure to reserve 1 cup of pasta water.
- Heat a large fry pan over a medium heat and sauté the onion, capsicum, and garlic. Add the chilli flakes and sea salt, then transfer to a blender with the cashews, nutritional yeast, and reserved pasta water.
- Blend until smooth, adding salt and pepper to taste if needed, then combine with your cooked pasta on a low heat for a few minutes.
- Top with more chilli flakes, sea salt, and parsley.
