Rice paper wraps get a refreshing level-up with envy™ apples in this recipe that really lets the ingredients shine!

Ingredients
- 100 g soaked and drained vermicelli noodles
- ½ cucumber, thinly sliced
- 1 carrot, finely shredded
- ½ red capsicum, sliced thinly
- 1 spring onion, finely sliced
- 1 envy™ apple
- 200g pulled pork
- ¼ cup hoisin sauce + extra for dipping
- 8 rice paper wraps
- ½ cup roughly chopped herbs – mint, coriander & parsley
Method
- Prepare the vegetables and set aside
- Core and slice the envy™ apple into fine strips
- Combine the pulled pork with the hoisin sauce and mix well
- Dip 1 rice paper sheet into a bowl or warm water for a 10-15 seconds until soft and pliable
- Lay the rice paper flat on a sheet of baking paper, arrange a few noodles in the centre, top with a little pulled pork and then a few of each vegetable, envyTM apple strips and fresh herbs creating a log in the centre of the rice paper
- Fold the ends of the rice paper in and roll up enclosing the filling
- Set the finished roll aside on a plate and cover with a damp paper towel or clean cloth
- Continue with the next rice paper sheet
- Arrange the rice paper rolls on a serving plate with extra hoisin for dipping and garnish with fresh herbs
