This delicious Mushrooms on Sourdough recipe can be enjoyed for breakfast or as a light meal.

Method

  1. In a large frying pan, heat oil over medium heat, add butter, and swirl around the pan. When butter foams, add mushrooms, crushed garlic, and thyme, and season with salt. Cook for 3 minutes, tossing regularly until mushrooms are tender. Add lemon juice and toss to coat.
  2. Lightly brush the cut side of sourdough with extra olive oil. Grill on the oiled side for 2 minutes or until charred.
  3. Spread goat’s cheese over the charred side of sourdough and top with mushroom mixture. Top with parmesan and season with salt and pepper.
