Feeling like a quick and easy but nutritious weeknight meal for your family? This yummy trout with nectarine salsa is sure to be devoured in seconds!


  1. Start by dicing up your nectarines into small cubes for the salsa, set aside in a medium sized bowl
  2. Roughly chop up parsley and juice one lemon and add to the bowl with the nectarines. Mix together well
  3. To a large pan, add 1 tsp of olive oil and pre-heat  to a medium heat. Once heated, add trout fillets skin side down
  4. Cook thoroughly skin side down for 5 minutes until the fillet side starts to go pink. Then flip over and cook for a further 2 minutes. Set aside to rest. 
  5. To a large plate, add your trout fillets skin side up and top with nectarine salsa. Enjoy!
