Plums and Peaches are in season and more delicious than ever! What better way to use them than in a yummy bruschetta?
Ingredients
Method
- Start by cutting the plums and the peaches into quarters and set aside
- Mix mascarpone cheese and ricotta together with maple syrup in a bowl and set aside
- Cut the baguette into medium sized slices diagonally
- Toast baguette slices to desired colour.
- Heat up a griddle or frying pan on medium heat. Add peaches and plums in batches to achieve a charred effect, turning over once each side is cooked as desired.
Assembly
- Take the toasted pieces of bread and the mascarpone mixture. Spread the mascarpone generously to coat the slices of bread.
- Take the plums and peaches and place them on top of the mascarpone
- Garnish with mint leaves and serve
