Ingredients
- 125g mushrooms, grated
- 375g chicken mince
- 1 clove garlic, crushed
- 2 cm piece ginger, finely chopped
- 1 tsp sesame oil
- ¼ cup soy sauce
- ¼ cup mirin
- ¼ cup rice wine vinegar
- 2 tbsp honey
- 2 tbsp brown sugar
- 1 clove garlic, crushed
- 1 tsp, fresh ginger
- 1 tbsp sesame seeds
- 1 head broccoli, cut into florets and steamed
- 1 cup rice, boiled
- 3 spring onions, sliced
Method
- To make the meatballs, combine mushrooms, chicken mince, garlic and ginger in a bowl. Mix to combine then roll into meatballs.
- Heat oil in a pan and cook meatballs for 3-4 minutes on each side, until cooked through. Remove from the pan and set aside.
- Add teriyaki ingredients to the pan. Stir to combine. Bring to the boil then reduce heat to low and simmer for 1-2 minutes
- Return the meatballs and any juices to the pan and simmer for a further 4-5 minutes, until the meatballs are cooked through and the sauce has thickened.
- Serve on a bed of cooked rice, steamed broccoli and a sprinkle of sesame seeds.
