Your morning yoghurt, with a twist! Do you have a fussy eater in your household, that likes to say no to breakfast? This simple recipe for our berry yoghurt bark will make mornings easy, and berry delicious!
Overnight oats or Bircher Muesli is a simple high fibre breakfast that will keep you satisfied. This make ahead recipe features the bright flavours of fresh ginger and lemon and is rounded out with a touch of sweetener. A small amount of turmeric lends its benefits and beautiful colour to this recipe as well!
- In a medium bowl, stir together all the ingredients (except the toppings). Cover and allow to sit in the fridge for minimum 30 minutes or overnight.
- Before serving, top with slivered almonds, yogurt and shredded coconut if desired.
Notes: this recipe is best with quick oats, however, rolled oats can be substituted. You will need to allow more time for them to soak in the fridge (at least 1 hour but preferably overnight).
