Littles ones will love these Mini Rainbow Sandwiches 🌈 Pureed beetroot, avocado, peas, sweet potato and carrot mixed with cream cheese makes for a colourful, veggie packed filling!

Method
- Steam the carrot and sweet potato until they’re both tender. Once tender, purée until smooth. Allow to cool.
- Divide the cream cheese among three bowls. Purée the beetroot until smooth and mix with the cream cheese in one bowl. Purée the peas and avocado together until smooth and mix with the cream cheese in another bowl. Combine the carrot and sweet potato mixture with the cream cheese in the remaining bowl.
- Trim the crusts off all the slices of bread and spread with the puréed mixtures. Cut into squares and serve!
