Let’s face it, potatoes are almost universally loved. Even if you don’t like them in one form, it’s highly likely you’ll like them in another.

Method

  1. Heat oil in a deep frying pan over medium heat.
  2. Add onion, curry powder, lemongrass, mustard seeds, water, and cook, stirring, for 2-3 minutes until fragrant.
  3. Add potato and coat in the paste, then add stock, coconut milk, and snow peas.
  4. Bring to a simmer and cook for 15 minutes or until the potato is just tender.
  5. Add peas and cook for a further minute, then add sugar and lime juice.
  6. Serve with rice.
