Have you tried pomelos before? They’re a large citrus fruit that tastes a lot like grapefruit.

Here, we’ve prepared a seriously yum prawn and pomelo salad that is zesty and fresh, the perfect light meal to satisfy your tastebuds tonight.

Method

  1. Add all of the dressing ingredients into a small jar and shake until combined
  2. Heat the oil in a large frypan or wok over high heat, add the prawns and cook without stirring for 1 minute, then stir-fry occasionally until golden and just opaque (3-4 minutes).
  3. Toss prawns and pomelo with a tablespoon of the chilli dressing in a bowl. Add the onion and herbs, toss lightly, scatter with fried shallots and serve with extra dressing and lime.
