This purple power chia bowl is packed full of fibre, bursting with healthy fats and antioxidants and taste delicious. It is a great option for a quick and easy breakfast for those mornings you are rushing out the door. Make this the night before so that you have it ready to go. If you’re more of a savoury breakie person, then this chia pudding is also a great option for a healthy snack or after dinner dessert. Feel free to add your favourite variety of berries and use other toppings such as sliced bananas, toasted coconut and a drizzle of honey.
- In a medium size mixing bowl, lightly mash the blueberries with a fork.
- To the bowl add all remaining pudding ingredients and combine well.
- Cover and refrigerate for 2 hours, or overnight.
- When ready to serve, spoon out preferred amount in to serving bowl and top with half a tablespoon of hemp seeds and a tablespoon of almond butter. If you like you can also drizzle over a little extra maple syrup.
