Our new go-to salmon dish! Our one-pan salmon with roast asparagus dish while simple to make, definitely does not compromise on flavour! Filled with tasty roasted asparagus, this is sure to please the guests!
- Preheat the oven to 200C. In a large bowl, combine olive oil and potatoes. Toss to combine. Roast the potatoes for 20 minutes or until golden brown. Toss the asparagus in with the cut potatoes, then place back in the oven for 15 minutes.
- Place cherry tomatoes and balsamic vinegar with the potatoes. Place the salmon amongst the vegetables. Drizzle with remaining oil and return to the oven for 10-15 minutes or until the salmon is cooked through. Toss over basil leaves and serve.
