Our Spanakopita is a beautiful twist on a Greek pie! With a combination of spinach and feta, your savoury tooth will be thanking you for this one.
- Heat oil in a medium-sized pan. Add onion and garlic. Cook for 1 minute or until softened. Then add spinach and half the dill. Cook, stirring over low heat for 1-2 minutes. Drain in a colander and cool. Add cheese and egg to the spinach mixture. Season with salt and pepper.
- Preheat the oven to 180C. Brush a baking dish with butter. Lay one sheet of filo on the base and sides and brush with butter. Repeat with 5 more sheets. Spread the spinach and cheese mixture over the top. Brush on top with butter.
- Bake for 45 minutes or until golden. Rest for 10 minutes.
