Winter
This Dragon fruit salad packs a satisfying crunch and is full of C and B vitamins thanks to the Dragon fruit!
Ingredients
- 1 dragon fruit, peeled and sliced
- 2 cups lettuce roughly chopped
- 1/2 small red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup pecans
- 1/3 cup (60g) fetta cheese, crumbled
- Dressing:
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt to taste
- Pepper to taste
Method
- Add all of the dressing ingredients together in a jar and shake until combined
- Combine all of the salad ingredients together in a large bowl, coat with the dressing, toss gently until covered and serve immediately
