If you’re a bit of a sweet tooth, take a look at this! Our Mandarin Meringue Pie Jars are a delightful way to end dinner on a sugar high with the sweet, fluffy meringue, homemade curd, and of course – those gorgeous mandarins!

Method
- Blitz biscuits in a food processor and add 40g of melted butter to form a crumb. Split this mixture evenly among four heatproof glasses.
- In a large bowl, whisk together the eggs, remaining 125g melted butter, mandarin rind, 1/2 cup mandarin juice, lemon rind, 1/2 cup lemon juice and caster sugar. Put in microwave for 5 mins, pausing every minute to stir. This will form a mandarin curd. Allow the curd to cool.
- Line the four glasses with mandarin slices. Beat cream and half of the mandarin curd to form soft peaks. Add a dollop of the cream mixture to each glass, before topping with the remaining curd.
- Whisk egg whites until you’ve got stiff peaks and add in 100g caster sugar. Beat slowly for a lovely glossy finish. Top each glass with the whipped egg white mixture and use a blowtorch to create a gorgeous golden glow.
