- In a small fry pan heat the olive oil over medium heat and lightly sauté the onion, capsicum and chilli stirring frequently, until tender.
- Remove from heat and stir in all remaining ingredients.
- If desired, blend relish mixture for a smoother consistency.
- Transfer to a large glass jar, secure the lid and refrigerate until chilled, about 2 hours.
