Papaya Relish - A better choice!

Our new Papaya Relish is scrumptious as a condiment with your favourite meal, or simply on its own topped on a slice of sourdough toast or biscuit.

Ingredients

½ cup red onion, peeled and diced
½ cup red capsicum, seeded and diced
1 red chilli, (small) seeded and finely chopped
1 Tbsp light olive oil
¼ cup mint leaves, fresh and roughly chopped
2 Tbsp lime juice, freshly squeezed
1 papaya, cut in half, de-seeded and cut into ½ inch cubes

Method

In a small fry pan heat the olive oil over medium heat and lightly sauté the onion, capsicum and chilli stirring frequently, until tender.
Remove from heat and stir in all remaining ingredients.
If desired, blend relish mixture for a smoother consistency.
Transfer to a large glass jar, secure the lid and refrigerate until chilled, about 2 hours.
