These delectable Indian fritters are a true delight for the taste buds. Thinly sliced onions, generously spiced and enveloped in a chickpea flour batter, are fried to perfection until golden and crispy. Pairing them with cucumber raita, a refreshing dip made with yogurt, grated cucumber, and aromatic herbs, adds a cool and creamy contrast that complements the bhajis beautifully. The cooling effect of the raita balances the spicy kick of the bhajis, creating a harmonious and irresistible combination that leaves you craving for more.

Method

  1. To make the Raita wash and halve cucumber lengthways.
  2. Using a teaspoon scoop out the seeds.
  3. Coasley Grate cucumber into a steel sieve and press out extra water.
  4. In a medium-sized bowl combine Yoghurt with cucumber.
  5. Finely chop mint and 1 tbsp of coriander and add to the yoghurt mixture.
  6. Season with salt to taste and keep in the fridge while making the onion bhajis.
  7. To make the onion bhajis preheat the air fryer to 200C.
  8. Peel and thinly slice onions. De-seed and finely chop the green chilli.
  9. Combine chickpea flour, baking powder, cumin powder, turmeric powder, chilli and 1/2 tsp of salt.
  10. Add the onion and mix to coat well.
  11. Gradually add water to make a thick batter.
  12. Spray the air fryer basket with cooking oil.
  13. Scoop a tablespoon of batter and drop it onto air fryer basket, you do not want the Bhajis to touch too much. depending on the capacity of your air fryer you may need to do two batches.
  14. Cook for approx 10-12 minutes until golden, turn halfway through for even cooking.
  15. Serve hot with Raita on the side.
  16. Sprinkle with reserved coriander if you like.
