Put half of the Zespri™ SunGold™ Kiwifruit in a microwave-safe mug or cup. Use afork to roughly mash. Add milk, oil, and honey. Stir until combined, then stir in flour.
Microwave on high for 55 seconds or until cake is springy and pulling away from the side of the mug or cup. Allow cooling for 1 minute.
Serve with a dollop of yogurt, the remaining Zespri™ SunGold™ Kiwifruit, and a few mint leaves to garnish.
