Each refers to a stage of growth of the regular cultivated mushroom.

  • Buttons are small unopened mushrooms and are normally sold for a higher price.
  • Cups are button mushrooms which have grown to a stage where the cap is beginning to open and some gills can be seen. These have a stronger more mature mushroom flavour.
  • Flats are harvested when the mushroom cap is expanded fully so that all the gills are visible.
