Spinach has a very impressive nutrient profile. One cup of raw spinach provides 56% of your daily vitamin A intake – with only 7 calories! Spinach leaves are also very high in antioxidants, which have been linked with lowering the risk of chronic disease.
- Kale
Kale is quite well-known for its health-promoting qualities, including how many nutrients and antioxidants it has. One cup of kale contains plenty of B vitamins, potassium, calcium, making it a great way for the vegans out there to get those much needed nutrients!
- Collard greens
Collard greens are jam-packed with so much fiber, protein and calcium! Studies have shown that a regular consumption of collard greens resulted in a 57% decrease of glaucoma in patients.
