It’s hard to beat these bliss balls for a summer afternoon snack. The apricots are in full swing and so it’s the perfect time to throw together these delicious little balls.
- Gather all ingredients and combine the apricots, nuts, oil, cinnamon, salt and syrup in a food processor or blender. Blitz the ingredients until well combined.
- Roll the mixture into little balls, one tablespoon at a time. Or make them chunkier to your preference. Roll the balls to cover them in the shredded coconut.
- Place the balls at a small gap from each other on a baking tray or plate lined with baking paper. Place them in the fridge or freezer to firm up.
