Method

  1. Heat vinegar and sugar in a large saucepan stirring occasionally until the sugar has dissolved.
  2. Add ginger, cinnamon, cloves, onions, apricots and apples and let simmer for 40 minutes, stirring occasionally.
  3. Add cherries and simmer for another 40-50 minutes or until it thickens and becomes syrupy.
  4. Stir in salt and nutmeg.
  5. Remove from the heat and allow to stand for 15 minutes.
  6. Spoon into sterilised jars.
  7. Seal with lid and refrigerate until ready to use.
