Who could say no to a delicious Caesar Salad! Made with crispy cos lettuce from your local fruit and veg shop, this recipe is sure to impress your family, or friends.
- Prep your croutons by cutting your bread into cubes. Add the bread cubes and bacon pieces to a frypan and cook them with 1 tbsp of olive oil, stirring occasionally. Cook until they’re crispy and golden, before setting them aside on a plate lined with paper towel.
- While the croutons are cooking, place the eggs in a saucepan and cover with water. Place over a medium to high heat and bring to a soft boil. Once boiling softly, reduce heat to medium and cook for 5 mins.
- Once cooked, remove the eggs from the saucepan, then run them under cold water for 1 min. Once they’re cooled, peel them, slice into quarters, then set aside.
- To serve, place the sliced cos lettuce in a large serving bowl. Top with the shredded chicken, grated parmesan, croutons, boiled eggs, bacon pieces, and Caesar salad dressing. Season with salt and pepper.
