This quick and easy Chicken Crispy Noodle Salad has to be a firm favourite of ours! Best devoured when fresh, the crunch of the noodles, and vibrant purple cabbage are a delight for the senses šŸ˜

Method

  1. Chop all ingredients as per ingredient directions.
  2. To make the dressing, whisk together all the dressing ingredients in a small bowl.
  3. Combine the red cabbage, salad leaves, corn, carrot, and half of the fried noodles on a large platter or a serving bowl.
  4. Top the salad with the shredded chicken and drizzle over the dressing. Sprinkle the crushed peanuts and remaining noodles on top and serve with fresh lime wedges.
