This quick and easy Chicken Crispy Noodle Salad has to be a firm favourite of ours! Best devoured when fresh, the crunch of the noodles, and vibrant purple cabbage are a delight for the senses š
Ingredients
- 200g cooked shredded chicken
- 2 cups red cabbage, finely shredded
- 1 cup salad leaves
- Ā½ cup corn kernels
- 2 small carrots, thinly sliced into strips
- Ā½ cup fried noodles
- Ā¼ cup crushed peanuts
- Lime wedges, to serve
- Dressing
- 1/3 cup mayonnaise
- 1 Ā½ tbs lime juice
- 1 tsp sesame oil
- Ā½ tsp Sriracha (optional)
Method
- Chop all ingredients as per ingredient directions.
- To make the dressing, whisk together all the dressing ingredients in a small bowl.
- Combine the red cabbage, salad leaves, corn, carrot, and half of the fried noodles on a large platter or a serving bowl.
- Top the salad with the shredded chicken and drizzle over the dressing. Sprinkle the crushed peanuts and remaining noodles on top and serve with fresh lime wedges.
