This quick and easy Chicken Crispy Noodle Salad has to be a firm favourite of ours! Best devoured when fresh, the crunch of the noodles, and vibrant purple cabbage are a delight for the senses 😍

Ingredients

200g cooked shredded chicken
2 cups red cabbage, finely shredded
1 cup salad leaves
½ cup corn kernels
2 small carrots, thinly sliced into strips
½ cup fried noodles
¼ cup crushed peanuts
Lime wedges, to serve
Dressing
1/3 cup mayonnaise
1 ½ tbs lime juice
1 tsp sesame oil
½ tsp Sriracha (optional)

Method

Chop all ingredients as per ingredient directions.
To make the dressing, whisk together all the dressing ingredients in a small bowl.
Combine the red cabbage, salad leaves, corn, carrot, and half of the fried noodles on a large platter or a serving bowl.
Top the salad with the shredded chicken and drizzle over the dressing. Sprinkle the crushed peanuts and remaining noodles on top and serve with fresh lime wedges.
