We sure do love a sweet salad! This Chicken & Mango Bowl is an absolute classic, filled with lots of yummy seasonal ingredients, and roast chicken.

Ingredients

1 cooked chicken breast, shredded
1 head cos lettuce, rinsed
1/2 cup cherry tomatoes, halved
1 small cucumber, sliced
1 mango pitted, peeled and diced
1 avocado pitted, peeled and sliced
½ small red onion, thinly sliced
Dressing of your choice
Salt and pepper, to taste

Method

Arrange the cos lettuce leaves in a large bowl, then top with the cherry tomatoes, sliced cucumber, diced mango, avocado slices, and red onion.
Drizzle over the dressing of your choice and season with salt and pepper.
Repeat the above steps for the second bowl, then enjoy!
