Avocados are an amazing source of monounsaturated fats, with studies showing that regular consumption of avocado lowers “bad” cholesterol. Furthermore, avocados are rich in many vitamins and minerals, with on being potassium which is a nutrient that is super important for a healthy heart. Ensuring you incorporate potassium rich foods in your daily diet can reduce the risk of strokes as it can help lower blood pressure.

Avocados can be quite easily incorporated in to your daily diet. Add it to a sandwich or wrap, chop it up and toss it through a salad, mash it as a dip or if you like try a more unique idea such as this chilled avocado and coriander soup. The flavours in this soup and fresh and vibrant and something a little different for an easy, no fuss meal.

Method

  1. In a food processor, combine spring onions, coriander and garlic; process until finely chopped.
  2. Add the flesh of avocado and process until smooth.
  3. Add yoghurt, buttermilk, 1/4 cup water, lime juice, curry powder and paprika to a food processor and process until smooth.
  4. Cover and refrigerate for at least 1 hour, until well chilled.
