Corn is a most satisfying vegetable snack ideal for picnics or school lunches as well as a side dish for barbeques.
- Strip the corncobs of their leaves and silk, wash the cobs and cut them in half. Cook corncobs for 5 minutes in a large volume of salted boiling water until tender, then drain.
- Drizzle corncobs with a little olive oil and spread with a little butter. Season with pepper and sprinkle with coriander leaves. Just before serving, squeeze a little lemon juice over the corn.
