What’s a match made in heaven you ask? Lemon + sweet potato!

Our Lemony Sweet Potato Pie is so good you’ll forget that there’s sweet potato in it!


  1. Preheat oven to 200C.
  2. Beat the egg yolks with the sugar and flour until well combined and creamed.
  3. Add the milk, lemon juice and lemon peel, butter, and the mashed sweet potatoes; beat until well combined.
  4. Pour into unbaked pie shell and place on middle rack of preheated oven.
  5. Bake for 10 minutes, then reduce heat to 180C and continue to bake until pie is firm, approx. a further 20 minutes. This may vary from oven to oven.
  6. Serve warm topped with chilled sweetened whipping cream.
