Ingredients

3-4 quinces, peeled, cored, and sliced
1 1/3 cup caster sugar
1.75L water
3 star anise
1 cinnamon stick
2 vanilla beans, halved
3 cloves

Method

Place water and sugar into an oven proof saucepan, heat gently until sugar is dissolved.
Preheat oven to 140C.
Add in quinces, and all spices.
Cover and cook for about 8 hours or until the quinces turn red.
Store in a container with the syrup for up to a week within a fridge.
