To make the flax eggs, combine tbsp ground flaxseed and 6tbsp of water. Stir and set aside for 5 minutes.
Add wet ingredients into a large bowl and whisk together (milk, maple syrup and vanilla extract and flax eggs). Add the remaining ingredients and stir to combine.
Transfer mixture into a lightly greased baking dish. Bake for 45 minutes or until light golden brown. Top with extra pears or maple syrup. Serve.
