Now that we’re getting back to working in the office, we’re always on the lookout for some on-the-go breakfast ideas! This Sweet Potato & Cinnamon Loaf made with in-season sweet potato is a delicious choice.
Oatmeal doesn’t have to be boring. Spice it up with our pear and ginger recipe that’ll kick start your day. ☀️
- Preheat the oven to 180C.
- To make the flax eggs, combine tbsp ground flaxseed and 6tbsp of water. Stir and set aside for 5 minutes.
- Add wet ingredients into a large bowl and whisk together (milk, maple syrup and vanilla extract and flax eggs). Add the remaining ingredients and stir to combine.
- Transfer mixture into a lightly greased baking dish. Bake for 45 minutes or until light golden brown. Top with extra pears or maple syrup. Serve.
