- Cut watermelon into cubes.
- Mix olive oil, vinegar and salt and pepper in a bowl.
- Add prawns, and toss well.
- Add rocket and mint and gently mix.
- Place prawn and lettuce mix on a platter, sprinkle over fetta (or goat’s cheese) and top with Seedless Watermelon cubes.
- Drizzle remaining dressing over salad and serve immediately.
