Method

  1. Cut watermelon into cubes.
  2. Mix olive oil, vinegar and salt and pepper in a bowl.
  3. Add prawns, and toss well. 
  4. Add rocket and mint and gently mix.
  5. Place prawn and lettuce mix on a platter, sprinkle over fetta (or goat’s cheese) and top with Seedless Watermelon cubes. 
  6. Drizzle remaining dressing over salad and serve immediately.
