Tangy and oh-so-simple-to-make, our Sweet and Sour Pickled Cucumbers are ready in minutes and make for a tasty snack or chilled, crunchy side dish everyone will enjoy.

Method
- Thinly slice the cucumbers and shallot. Add both to a medium sized bowl.
- In a separate bowl whisk together the rice vinegar, sugar, grated ginger, salt, pepper, and thinly sliced chilli. Once the sugar has dissolved, pour the mixture over the cucumbers.
- Cover and place in the fridge for 30 minutes before serving.
