Method

  1. Preheat the oven to 200C. Remove any stalks from the fennel and then cut them in half. Cut each halves into thick slices and arrange them on baking paper.
  2. In a bowl combine olive oil and minced garlic and brush it over the sliced fennel. Sprinkle with thyme, salt, and pepper.
  3. Roast the fennel for 25 minutes. After 25 minutes sprinkle parmesan over the fennel and return to the oven to bake for another 10 minutes. Serve warm.
