- Prepare the beans, red onion and tomatoes as directed.
- To assemble the tacos, place the beans at the bottom of the taco. Top with red onion, tomatoes and smashed avocado. Garnish with lime juice and salt and pepper. Top with cheese, sour cream and coriander if desired.
