Yen Le Apple Strudels

Enjoy these delicious Modi Apple Strudels.

Method

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, cut each into quarters then slice the apple thinly.
  3. In a large bowl mix the apples, sultanas and cinnamon.
  4. Line a large tray with baking paper. Then place the 2 sheets of puff pastry onto the tray.
  5. Spoon half the apple mixture lengthwise down the centre of a sheet, covering a third of the
    sheet. You should have pastry of equal length on each side of the apple mixture.
  6. Using a knife cut slits 2cm apart on each side of the apple mixture.
  7. Start to braid the pastry. Take one strip of pastry from the right side and fold it in and over the top of the apple mixture then take the left side and fold it in and over the apple mixture. Alternate sides and fold in until you get to the bottom.
  8. Repeat steps 5, 6 & 7 to make the second apple strudel.
  9. Optional – cut out leaves and flowers with cookie cutters from the 1/2 sheet of puff pastry
    and stick the shapes on the strudels by pressing down gently.
  10. Beat the egg and brush the egg wash onto the strudels.
  11. Bake in the oven for 20 minutes until golden brown.
