Potato lovers! This one’s for you! Fluffy on the inside and crispy on the outside, our Air Fryer Baked Potatoes with a simple side salad recipe is one of the best ways to enjoy your spuds!
- Add the washed potatoes to a large bowl. Toss well in the olive oil, salt, and pepper. Place in the air fryer basket and cook at 200°C for 30 mins.
- Carefully turn the potatoes and cook for another 10-15 mins, or until fork tender.
- While the potatoes are cooking, prepare the topping. Heat 1 tbsp oil in a large frypan and cook the onion until softened. Next, add the mushrooms and tomatoes, cooking for around 5 mins. Finally, add the spinach and cook for 1-2 mins until wilted. Season with salt and pepper to taste.
- To serve, cut the potatoes in half lengthwise, gently pressing the sides apart. Fill each potato with a generous dollop of the mushroom, potato, and tomato mix. Top with some small dollops of sour cream and serve alongside a simple salad of lettuce leaves, olive oil and crumbled feta. Enjoy!
