BBQ'd Asparagus Salad

Method

  1. Preheat BBQ or grill. Combine olive oil and garlic in mixing bowl and add asparagus and toss to coat with garlic oil.
  2. Cook asparagus 2 minutes each side until just tender. Remove from BBQ or grill and set aside.
  3. Arrange salad leaves on platter or individual serving plates. Top with asparagus and scatter with tomatoes and feta and just before serving squeeze lemon over and season with pepper.

Variation: Include the truss tomatoes and other vegetables in season on the BBQ.
