- Preheat the oven to 180°C. In a mixing bowl, add the eggs and season with salt and pepper, fresh chilli and mixed herbs. Whisk together. Then add the cherry tomatoes and fresh spring onion.
- Add thick sandwich bread to a baking sheet pan. Pat the centre of the bread down to make a small well. Drizzle over some olive oil and top each slice with egg mixture and crumbled feta.
- Place in the oven for 15 minutes or until the egg mixture is fully cooked.
