The perfect healthy fuel to kick off your weekend activities and ready in 5 minutes, whip up a batch for the entire family and garnish as desired – who said health food was hard to make?!

Method

  1. Preheat the ovenĀ to 180Ā°C. In a mixing bowl, add the eggs and season with salt and pepper, fresh chilli and mixed herbs. Whisk together. Then add the cherry tomatoes and fresh spring onion.
  2. Add thick sandwich bread to a baking sheet pan. Pat the centre of the bread down to make a small well. Drizzle over some olive oil and top each slice with egg mixture and crumbled feta.
  3. Place in the oven for 15 minutes or until the egg mixture is fully cooked.
