Getting bored of your regular salads? Jazz it up with our persimmon salad with radicchio and parmesan. Both refreshing and savoury, the bowl will be spotless after dinner!
Figs are in abundance right now, so we couldn’t resist making this delightful Fig, Pear, Goat’s Cheese and Walnut salad. The sweetness of the fruits paired with the tang of the cheese is a flavourful delight.
- Preheat your oven to 180C. On a lined baking tray, place your figs, walnuts and goat’s cheese. Grill for 5 mins.
- To prepare the dressing, whisk together the lemon juice, honey, oil and mustard. Season with salt and pepper, to taste.
- Place your pears and rocket on a serving dish, and top with the grilled ingredients. Drizzle over the dressing and stir, or serve as is.
