Have you tried the delicious combo of rockmelon and prosciutto? If you answered no, you’ll never look back after tasting our new Melon & Bocconcini Salad. The sweet melon pairs so beautifully with the salty prosciutto!

Method

  1. Use a melon baller to scoop balls from the rockmelon halves and add balls to a large bowl.
  2. Add the bocconcini and the torn prosciutto. Sprinkle over the basil and mint leaves.
  3. In a small bowl, whisk together the olive oil, honey and balsamic vinegar. Season with salt and pepper.
  4. Drizzle the dressing over the rockmelon and toss to coat. Adjust seasoning if required, then serve fresh!
