This refreshing and easy summer dish comes together in no time. Sweet juicy watermelon, crispy cucumber, and feta cheese are tossed with a simple honey lime pepper dressing and topped with mint for a cooling summer salad.
1. To a large bowl, add the cubed watermelon, cucumber, feta cheese, and mint. Gently toss to combine.
2. In a small bowl, whisk together the dressing ingredients and drizzle over the salad. Give a good toss to combine. Season with salt and pepper if desired and serve cold.
Note: Leftovers can be stored covered in the fridge for up to 2 days.
