- Using a food processor, blitz together the coconut, cashews and dates to form a crumbly mixture.
- Add in the vanilla, salt, and frozen raspberries. A vibrant pink mixture should form.
- Using your hands, roll the mix into balls. You might like to then toss these balls in more desiccated coconut.
- Place balls in the fridge and let them set until solid.
