A sprinkle of this, and a blitz of that! We absolutely LOVE these No-Bake Raspberry Energy Balls made with minimal, clean ingredients. Your mid-morning snack just got a makeover!

Method

  1. Using a food processor, blitz together the coconut, cashews and dates to form a crumbly mixture.
  2. Add in the vanilla, salt, and frozen raspberries. A vibrant pink mixture should form.
  3. Using your hands, roll the mix into balls. You might like to then toss these balls in more desiccated coconut.
  4. Place balls in the fridge and let them set until solid.
