Spring time is salad time! Meet our Sweet Potato & Apple Salad, a wholesome dish that heroes real ingredients and satisfies hungry bellies!
- Peel, dice, and roast sweet potato in oven for 25-30 mins at 200C, or until tender.
- Add mixed salad leaves, brown rice, roasted sweet potato, apple, and walnuts to a large serving bowl.
- Add all the dressing ingredients to a blender or food processor and blend or pulse until mixture is smooth and creamy. Season to taste with salt and pepper.
- Drizzle the dressing over the salad and toss before serving. Enjoy!
