It’s a Mediterranean feast at our place tonight! Featuring a rainbow of veggies from your local fruit and veg shop, these flavourful Veggie Packed Wraps are a great way to enjoy lots of veggies in your mid-week feast.
- In a pan, cook the chopped red onion, mushroom, capsicum and zucchini with a generous drizzle of olive oil. Stir until they veggies have softened. Set aside.
- Heat up your wraps in the oven, or in another pan.
- To assemble your wraps, spread over some hummus, place a small handful of spinach leaves on top, before piling on all of the vegetables. Top with some crumbled feta before folding, and slicing in half.
